You will need: 175g dark muscovado sugar, 85g golden sugar, 100g butter, 3 tsp ground ginger, 1 tsp ground cinnamon, 350g plain flour, 1 tsp bicarbonate of soda, 1 egg.

Method

1. Cream the sugar, golden syrup and butter together. Mix the spices and flour in a separate bowl. Dissolve the bicarbonate of soda in 1 tsp of cold water. Make a well in the centre of the dry ingredients, add the melted sugar mix, egg and bicarbonate of soda. Mix well and put in the fridge for one hour.

2. Heat the oven to 190ºC. Thinly roll out the dough on a floured surface and cut into shapes with Christmas cutters, making a small hole in the top of each biscuit with a skewer.

3. Bake for 12-15 minutes, leave to cool and then string with ribbon. You can ice and decorate them if you’d like.
